Currently, about 10 thousand tons of birch sap have already been collected. The duration and success of the harvesting season directly depend on weather conditions, and a sharp warming can significantly adjust the plans of harvesters. In the Brest region, where the warming occurred earlier than in other regions, the sap collection is already being completed, while in the Vitebsk region, it only started last week.
More than 20 organizations of various forms of ownership and departmental subordination are engaged in harvesting birch sap for industrial processing in Belarus. Today, Belarusian enterprises can produce about 40 types of birch sap-based drinks. In addition to plain birch sap with sugar, beverages with added juices of various cultivated and wild berries, and infusions of medicinal herbs – oregano, linden flowers, chamomile, lemon balm, and others – are produced. A number of enterprises produce birch sap with added juices of various exotic fruits.
