February 1, Vitebsk / Diana Kurilo - BELTA/. The catering system in the Vitebsk region will be improved with the help of culinary heritage. Within the framework of the ENI programme "Lithuania-Latvia-Belarus", the project "Improvement of Culinary Services in Latgale and Vitebsk Regions based on the Culinary Heritage Concept" will be implemented in the Vitebsk region, Mikhail Orekhov, Head of the Department of Physical Culture, Sports and Tourism of the Glubokoye District Executive Committee, told a BELTA correspondent.
The project envisages the collection of materials on the gastronomic traditions of the Glubokoye, Miory, and Verkhnedvinsk districts, adaptation of local recipes to modern conditions, mastering their cooking technology, inclusion of dishes in the menus of catering establishments, and internships for catering specialists in cafes and restaurants in Western Europe operating on the principles of culinary traditions. The project will also result in the publication of a book of traditional recipes from Latgale and Vitebsk region.
As Mikhail Orekhov noted, the first step towards the implementation of this project has already been taken in the Glubokoye district - work has begun on collecting recipes for local dishes. Two of them, rye bread and butter lamb, have been included in the list of intangible heritage sites of Belarus and will certainly be among the dishes of culinary tradition.
The project implementation is planned for 18 months. Its implementation was approved by the Resolution of the Council of Ministers No. 67 of January 29, 2013 "On the Approval of International Technical Assistance Projects". The Vitebsk Regional Executive Committee ensures the coordination and control of its implementation.-0-
