In anticipation of the Christmas and New Year holidays, Verkhnedvinsk cheesemakers have supplied the first batches of mozzarella and ricotta-type cheeses to retail chains, as reported to BELTA correspondent by OJSC "Verkhnedvinsk Butter and Cheese Factory".
The production of the new import-substituting product has been mastered by the joint limited liability company "Verkhny Lug", whose founders are OJSC "Verkhnedvinsk Butter and Cheese Factory" and the Russian LLC "Crown Trading" - one of the major traders of Belarusian dairy products in the Russian market.
The specialization of the new enterprise is the production of soft cheeses. The founders have acquired the latest equipment from France and Italy, the analogues of which are not yet available in Belarus. The equipment's productivity is 3 tons per hour. The entire production process is automated, and the technological process is displayed on a monitor.
As noted at the enterprise, the production process of mozzarella-type cheeses was mastered by Verkhnedvinsk cheesemakers with the participation of Italian specialists, who highly praised the professionalism of their Belarusian colleagues. Verkhnedvinsk mozzarella is produced in accordance with Italian technology from pasteurized milk of the highest grade or "extra" class through coagulation with a natural enzyme preparation, using bacterial starters. Currently, the enterprise produces mozzarella-ciliegine-type cheese and mozzarella-bocconcini-type cheese, which are offered in the form of cheese balls in brine. Along with mozzarella, the production of ricotta-type dairy product has been mastered, in the manufacture of which whey remaining after mozzarella production is used. In the near future, semi-hard mozzarella-scamorza-type cheeses, as well as cecil-type cheeses, will appear on the shelves.
Approximately 80% of "Verkhny Lug's" products will be exported.-0-
